A bomb large enough to do substantial structural damage to the institute would take far more supplies than we would be able to collect in a single night or store over multiple nights. Simply because something is explosive doesn't mean it can take out a building.

Brainwashed patients have damaged parts of the institute before. They revert to their original state at the end of night. You're assuming that whatever's controlling this is stationed in the institute, and we have no reason to believe that's the case.

Explosives could serve a purpose in opening up more of the institute to exploration, but demolishing the thing isn't an option.

As Renamon pointed out above, "escape" means different things to different people.
